The History of Recipes
Transcribed cooking instructions as a concept can be traced back into antiquity, in truth as far back into recorded history as ancient Egypt, and possibly even further. Interesting though that is, in the main part, these ancient cook books were just simple hieroglyphic instructions for food preparation.
During the time of the Romans a man called Apicius compiled a collection of documents which described recipes prepared by his fellow Romans. In his works, he describes how the meals of wealthy Romans were divided into appetizers, main meal and dessert, something we still use today. Additionally, he tells us how the cooks of his times were skilled in the use of many different aromatic flavors, including some that we all recognise like basil, mint and parsley. Later on, in the 15th century, the Crusaders brought back many new spices and herbs from Arab countries, such as parsley, basil and rosemary. These new foods and tastes led to an eruption in recipe manuscripts, most of which are kept safe in academic collections. When we get to the 20th century, recipe publications were increasing in popularity mostly due to more people being able to read, more free time and having more money. |
