The History of Recipes
Food historians have traced the existence of recipes far back into antiquity, at least as far back into recorded history as the Egyptians, and quite possibly further than that. Interesting though that is, sadly, these old cook books were just basic hieroglyphic or cunieform instructions for preparing meals.
As we move into The time of the roman empire 25BC a roman called Apicius wrote some scripts describing recipes prepared by his fellow Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvres, entrees and desserts, something that is very familiar to us today. Additionally, he tells us how the ancient chefs were skilled in the use of a good variety of spices and herbs, including a few that are still present in modern kitchens like bay, mint and parsley. Over the following few hundred years, the powerful and wealthy houses competed with each other to serve up the best banquets, and because of this the best chefs and their collection of recipes were greatly in demand. However, it wasn`t until the 1800s that cookery and recipe publications became popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, devoted much of their lives to assembling, trying out, and publishing recipes to allow everyone to enjoy them. When we get to the twentieth century, recipe books were greatly in demand mostly due to better eduction, more leisure time and disposable income. |
