The History of Recipes
Written cooking instructions as an idea can be tracked far back into history, at least as far back into history as the ancient Egyptians, and possibly even further. Interesting though that is, mostly, these early cook books were just very simple pictorial instructions for food preparation.
In an interesting twist, the oldest recipe in existence, according to academics are some tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated and blissful. Later on, in The time of the romans 25BC a roman called Apicius wrote a few documents describing recipes prepared by wealthy Romans. In his scrolls, he describes how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and desserts, something we still use today. Aspicius also recounts how the chefs of Roman times were skilled in the use of a good variety of spices and herbs, including a few that will be familiar to modern chefs like bay, fennel and parsley. Later on, in the 15th century, people returning from the crusades brought back many spices and herbs from Arab cooking, including spices such as basil and coriander. These new foods and tastes prompted an explosion in books on cookery, many of which are kept safe in private collections. Over the succeeding few centuries, the powerful and wealthy competed with each other to offer the most exotic banquets, and as a consequence, chefs and their recipe collections were at a premium. However, it wasn`t until the 19th century that fine cooking and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, spent years to collecting, testing, and publishing recipes that were common in the better off homes of the day. When we get to the 20th century, cook books were in great demand, mostly due to more people being able to read, increased leisure time and having more disposable income. The TV revolution gave us TV cookery programs and the accompanying recipe books. Which brings us neatly to the present day and the internet revolution, allowing everybody to access massive numbers of recipes such as those found on this recipe site. |
