The History of Recipes

Food historians have tracked the existance of recipes back into the far past, certainly as far into history as ancient Egypt, and maybe even further. Interesting though that maybe, mostly, these early cookbooks were just basic pictorial, hieroglyphic or cunieform instructions for food preparation.

Interestingly, the oldest recipe discovered, according to Professor Solomon Katz, are some tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated and blissful.

During Roman times around 25BC a man called Apicius created a few documents describing recipes cooked by his fellow Romans. In his scrolls, he tells us how the meals were split into hors d`oeuvre, entrees and dessert, a very modern way of dining. This early Roman chef recounts how the ancient Romans used a good variety of herbs and spices, including a few that will be familiar to modern cooks such as bay, fennel and asafoetida.

As our culinary historical trip moves on a few more years we have a couple of interesting recipe books which appeared in the 1300s ; a recipe book titled `Forme of Cury`, and another, similary titled `Curye on Inglish`. Although the titles sound familiar, these are nothing to do with the indian food that we all know today, but instead accounts of the types of food on the tables of the rich and wealthy people of that period.

In the fifteenth century, knights returning from the crusades brought us many foods and herbs from the holy land, including spices such as basil and coriander. The introduction of these new herbs and spices caused an outbreak in recipe publications, the majority of which are now in private cookery archives.

During the succeeding few hundred years, the rich families of Wesstern Europe competed with each other to lay on the most exotic meals, and consequentially chefs and their recipe collections were highly sought after. Even so, it wasn`t until the 1800s that haute cuisine and cookery books rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to collecting, verifying, and publishing recipes for their fellow cooks to enjoy.

By the arrival of the 20th century, cooking publications are in high demand, mostly as a result of better eduction, leisure time and being a little richer.

Like it or not, the introduction of television brings us cooking programs and the recipe books that accompanied them.

And that brings us to the present day and the internet revolution, permitting everyone to search through thousands of recipes such as those found on our web site.
