The History of Recipes

Food historians have proved the existence of recipes way back into antiquity, at least as far back as the Egypt of the Pharoahs, and maybe even further. However, mostly, these ancient recipes were just very basic pictorial, hieroglyphic or cunieform recipes for preparing meals.

In an interesting twist, the most ancient recipe discovered so far, according to academics are a few stone tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful.

Much later, in Roman times a roman called Apicius created a collection of scripts showing how to cook the recipes prepared by wealthy roman citizens. In his scrolls, Apicius describes how the roman meals were split into hors d`oeuvre, main meal and afters, something we still use today. He also informs us how the Roman cooks used a good variety of aromatic flavours, including some that we all recognise like thyme, mint and asafoetida.

Later on, in the 15th century, people returning from the crusades brought us many new foods, spices and herbs from middle-east cuisine, including spices such as parsley, basil and rosemary. These new herbs and spices prompted an explosion in manuscripts on cookery, most of which are kept safe in private collections.

Over the succeeding few hundred years, the upper classes strove to lay on the best banquets, and because of this chefs and their collection of recipes were much in demand. Even so, it wasn`t until the 19th century the formal cooking and recipe books reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to collecting, trying out, and writing down recipes that were common in the better off homes of the day.

When we get to the twentieth century, cookery books are starting to become popular due to higher levels of literacy, more spare time and having more disposable income.

The TV revolution gave us celebrity TV chefs and the spin-off recipe books.

And that pretty much brings us to the present day and the invention of the internet, permitting us all to access thousands of recipes such as those found on our site.
