The History of Recipes
It is quite feasible to follow the history of recipes far back into the far past, at least as far back as pharonic Egypt, and maybe even further. In practice though, these, early records were just basic hieroglyphic recipes for preparing meals.
Interestingly, the oldest recipe in existence, according to academics are some ancient tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. As we move into The time of the romans 25BC a roman called Apicius created some scripts showing how to cook the recipes prepared by wealthy Romans. In his works, he describes how the meals were separated into appetizers, main meal and desserts, a very modern way of dining. Additionally, he recounts how the chefs of Roman times used a good variety of aromatic flavours, including some familiar names such as thyme, fennel and asafoetida. Later, in the 15th century, people returning from the crusades brought back many new foods, spices and herbs from Arab countries, including spices like parsley, basil and rosemary. These new foods and tastes created an eruption in recipe books, most of which are now in private cookery archives. During the next few hundred years, the powerful and rich strove to lay on the most exotic banquets, and as a consequence, the best chefs and their collection of recipes could command a high salary. However, it was during the 19th century that cookery and recipe books rose to prominence. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated their lives to collecting, trying out, and writing down popular recipes of the day. Like it or not, the introduction of TV gave us celebrity TV chefs and the accompanying recipe books. Which brings us neatly to the present day and the internet revolution, allowing everyone to search through thousands of recipes such as those found on sites such as the one you are reading now. |
