Ingredients
1/2 cup coarsely chopped pecans
1/2 cup butter
3/4 cup brown sugar, packed
1/2 cup semisweet chocolate pieces
Directions
Sprinkle pecans in bottom of buttered 8 inch square baking pan.
Combine butter and brown sugar in 2 quart heavy saucepan. Cook over
medium heat, stirring constantly, until mixture comes to a boil.
Continue cooking, stirring constantly, until mixture reaches hard
crack stage (295F) on candy thermometer. Immediately pour hot mixture
over pecans,spreading evenly. Sprinkle with chocolate pieces. Let
stand 5 minutes. Spread melted chocolate evenly over all. When
chocolate is set, break up into pieces. Makes about 3/4 of a pound.

The History of Recipes
Academics have found proof that recipes existed back into the far past, certainly as far back into recorded history as early Egypt, and maybe further still. Interesting though that maybe, generally, these old records were just simple pictorial, hieroglyphic or cunieform instructions for food preparation.
The truth of the matter is, the oldest recipe in existence, according to food historians are a few tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated and blissful. As we move into Roman times 25BC a man called Apicius assembled a number of documents detailing recipes prepared by his fellow Romans. In his publication, Apicius tells us how the meals were divided into hors d`oeuvres, main meal and dessert, a style of dining still practiced today. Aspicius also recounts how the Roman chefs made use of a wide range of herbs and spices, including some familiar names for example thyme, mint and parsley. During the next few centuries, the powerful families of Wesstern Europe competed to serve the best banquets, and as a consequence, the best cooks and their recipe collections were at a premium. Nevertheless, it wasn`t until the 19th century that haute cuisine and recipe collections really came of age. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated years of their lives to assembling, verifying, and writing down recipes of the day. The revolution that is television brought us TV cooks and the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, allowing us all to search through thousands of recipes just like those on our web site. |
