Ingredients
6 oz semisweet chocolate *
4 tbsp unsalted butter **
1/2 tsp vanilla extract
2 egg yolks, lightly beaten
4 tbsp unsweetened cocoa powder
Directions
*Note: Semisweet chocolate should be coarsely chopped. ** Unsalted
butter should be cut into small pieces. In a double boiler, melt the
chocolate and butter over simmering water. Remove from the heat and
stir in the vanilla. In a small bowl, gradually whisk the warm
chocolate mixture into the egg yolks. Cover and refrigerate until
firm, about 1 hour. Shape level tablespoons of the chocolate mixture
into balls and then roll them in the cocoa. Refrigerate the truffles.

The History of Recipes
It is quite possible to track the history of recipes far back into the distant past, in truth as far back into history as ancient Egypt, and possibly even further than that. Interesting though that maybe, these, ancient records were just primitive pictorial, hieroglyphic or cunieform instructions for meal preparation.
Later on, in The time of the roman empire 25BC a man called Apicius compiled a few documents which described recipes prepared by his fellow Romans. In his publication, Apicius recounts how the meals were divided into hors d`oeuvres, main meal and afters, something that is very familiar to us today. Aspicius also describes how the Roman cooks made use of many aromatic flavours, including many that are still in use today for example thyme, mint and parsley. Later, in the fifteenth century, the Crusaders brought back many new spices and herbs from the East, including parsley and basil. The introduction of these new herbs and spices created an explosion in manuscripts on cookery, some of which are now in private collections. The arrival of television brought us celebrity chefs and the accompanying recipe books. Which brings us neatly to the present day and the internet revolution, permitting everyone to access thousands of recipes like those on this site. |
