The History of Recipes
Academics have tracked the existence of recipes way back into the distant past, at least as far back into history as the Egypt of the Pharoahs, and maybe even further. Having said that, mostly, these ancient records were just very simple hieroglyphic or cunieform recipes for meal preparation.
Progressing into The time of the romans 25BC a man called Apicius assembled a few documents describing recipes prepared by wealthy Romans. In his publication, he recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also describes how the Romans made use of a good variety of herbs, including a few that will be familiar to modern chefs such as basil, fennel and parsley. In the 15th century, the Crusaders brought back many foods and spices from Arab cuisine, including spices such as coriander, basil and rosemary. The introduction of these new foods and spices created an increase in manuscripts on cookery, the majority of which are kept safe in private libraries. By the arrival of the twentieth century, recipe books are in great demand, as a result of higher levels of literacy, leisure time and disposable income. |
