The History of Recipes
It is quite feasible to track the history of written cooking instructions way back into ancient history, in fact as far back as the Egyptians, and potentially, even further back. Having said that, mostly, these early records were just basic pictorial, hieroglyphic or cunieform recipes for preparing food.
As we move into Roman times around 25BC a man called Apicius created a collection of scripts showing how to cook the recipes cooked by his fellow Romans. In his scrolls, he tells us how the roman meals were split into starters, main meal and afters, a very modern way of dining. This early Roman chef describes how the cooks of his times were skilled in the use of many herbs, including a few that will be familiar to modern chefs like bay, fennel and parsley. During the following few centuries, the rich families of Europe strove to offer the best banquets, and as a consequence, the best chefs and their recipe collections were much in demand. Notwithstanding that, it was during the 19th century that cooking and recipe books became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted much of their lives to collecting, verifying, and publishing recipes that were common in the better off homes of the day. Like it or not, the introduction of TV brought us TV chefs and the spin-off recipe books. Which brings us neatly up to date and the internet revolution, allowing everyone to access massive numbers of recipes like the ones you can find on this web site. |
