The History of Recipes
Historians have traced the existence of recipes way back into antiquity, in fact as far as the Egyptians, and maybe further still. Interesting though that maybe, generally, these ancient recipes were just primitive hieroglyphic instructions for meal preparation.
In an interesting twist, the most ancient recipe found, according to food historians is a collection of clay tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `blissful`. Progressing into Roman times 25BC a roman called Apicius compiled a number of documents which described recipes cooked by wealthy Romans. In his publication, Apicius tells us how the meals were divided into starters, main course and dessert, a very modern way of dining. Aspicius describes how the cooks of his times were skilled in the use of many different herbs and spices, including a few you will know like basil, fennel and dill. Over the succeeding few centuries, the rich and powerful families of Wesstern Europe tried to serve up the most exotic meals, and as a result chefs and their recipes were at a premium. Nevertheless, it was during the nineteenth century that haute cuisine and recipe books became really popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to collating, verifying, and writing down recipes to allow everyone to enjoy them. When we get to the 20th century, cookery books were starting to become popular mostly as a result of increased literacy, leisure time and having more money to spend. |
