Ingredients
1 1/2 cup flour
1/4 cup cocoa powder
1 tsp baking powder
1 tsp baking soda
1/3 cup sugar
2 cup buttermilk
1/2 cup vegetable oil or melted butter
2 large eggs, separated
1 tsp vanilla extract
1 pinch cream of tartar
1 cup chopped pecans (optional)
1 ice cream, for accompaniment
Directions
Sift together flour, cocoa, baking powder, baking soda, and sugar.
Make a well in center of sifted dry ingredients.
2. In a separate bowl mix buttermilk, oil, egg yolks, and vanilla.
Pour into the well and mix with dry ingredients.
3. Beat egg whites with cream of tartar until soft peaks form.
Gradually fold into batter, one third at a time. Fold in pecans (if
used).
4. Cook in waffle iron according to manufacturer's instructions. Top
with ice cream.

The History of Recipes
Academics have tracked the existence of recipes back into ancient history, in fact as far as pharonic Egypt, and possibly even further. Interesting though that maybe, in the main part, these old records were just very basic pictorial recipes for preparing food.
Fascinatingly, the most ancient recipe discovered so far, according to food historians are some tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated. Progressing into The time of the romans 25BC a man called Apicius created some documents showing how to cook the recipes prepared by wealthy Romans. In his scrolls, he tells us how the meals of wealthy Romans were separated into appetizers, entrees and dessert, something we still use today. Aspicius describes how the ancient chefs made use of a wide range of spices, including some familiar names such as basil, mint and parsley. In the 15th century, knights returning from the crusades brought back many new foods and spices from Arab cuisine, such as basil and coriander. The introduction of these new herbs and spices led to a surge in publications on food, many of which are now in private cookery archives. Over the next few centuries, the rich families of the West strove to lay on the most extravagent meals, and because of this cooks and their recipe collections were at a premium. Even so, it was during the 1800s that fine cookery and recipe collections became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated years of their lives to assembling, testing, and writing down popular recipes of the day. By the arrival of the twentieth century, cooking publications were starting to become popular as a result of higher levels of literacy, more free time and having more money to spend. |
