The History of Recipes
Food historians have traced the existence of recipes way back into history, certainly as far back as the early Egyptians, and potentially, even further back. Interesting though that is, these, old recipes were just primitive hieroglyphic or cunieform recipes for preparing food.
Fascinatingly, the oldest recipe discovered, according to experts are some stone tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated and blissful. As we move into The time of the roman empire 25BC a roman called Apicius compiled a collection of documents describing recipes enjoyed by his fellow Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and desserts, something that is very familiar to us today. This early Roman chef describes how the ancient Romans used many spices, including some familiar names for example bay, rue and asafoetida. Over the following few hundred years, the upper-class families of the West competed with each other to serve the best banquets, and consequentially the best chefs and their recipes became highly prized. However, it wasn`t until the 19th century that cookery and recipe publications rose to prominence. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to collating, testing, and writing down recipes of the day. By the arrival of the 20th century, cookery publications are in high demand, due to better eduction, people having increased leisure time and disposable income. The introduction of television brings us cooking programs and the spin-off recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting everyone to search through thousands of recipes like the ones you can find on this web site. |
