The History of Recipes
We are able to read the history of meal recipes way back into history, in truth as far back into history as ancient Egypt, and maybe even further. Interesting though that is, generally, these old records were just primitive hieroglyphic or cunieform recipes for meal preparation.
The truth of the matter is, the most ancient recipe found, according to Professor Solomon Katz, is a series of ancient tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful and blissful. As we move on, there were a couple of interesting cookery books which date from the 1300s ; one book called `Forme of Cury`, and another titled `Curye on Inglish`. Despite their titles, these books are not about the indian curry that is served today, but instead descriptions of the types of meals on the menus of the nobility of that period. During the next few centuries, the upper-class families of the West tried to serve up the most exotic meals, and as a result chefs and their recipe collections were greatly in demand. However, it wasn`t until the nineteenth century that cookery and cookery books reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, testing, and writing down recipes of the day. By the advent of the 20th century, cookery publications are increasing in popularity mostly due to increased literacy, leisure time and being a little richer. |
