The History of Recipes
We can trace the history of `recipes` way back into distant history, in truth as far back as the Egypt of the Pharoahs, and potentially, even further back. Interesting though that is, these, early cook books were just very simple pictorial, hieroglyphic or cunieform recipes for meal preparation.
In fact, the most ancient recipe in existence, according to academics are some ancient tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `blissful`. Progressing into Roman times around 25BC a roman called Apicius compiled a collection of documents which described recipes cooked by his fellow Romans. In his scrolls, he recounts how the meals of wealthy Romans were divided into hors d`oeuvre, main course and afters, a very modern way of dining. He also informs us how the ancient chefs made use of many herbs, including a few you will know for example thyme, mint and asafoetida. Later on in the 1400s, knights returning from the crusades brought back many new foods and spices from Arab cooking, including spices like coriander, parsley, and rosemary. The introduction of these new culinary ideas caused an increase in manuscripts on cooking, the majority of which still exist in private cookery archives. For the next few years, the upper-class families of the West tried to offer the most extravagent banquests, and as a consequence, the best chefs and their recipes were at a premium. However, it wasn`t until the nineteenth century that cooking and cookery books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated years of their lives to collating, verifying, and writing down recipes of the day. By the advent of the twentieth century, cookery publications were starting to become popular as a result of more people being able to read, people having increased spare time and having more disposable income. |
