The History of Recipes
It is quite possible to track the history of recipes far back into the distant past, at least as far back into recorded history as the early Egyptians, and maybe even further. Interesting though that maybe, in the main part, these old records were just primitive hieroglyphic or cunieform recipes for preparing food.
During Roman times 25BC a roman called Apicius created a few scripts describing recipes prepared by the Romans. In his scrolls, he tells us how the meals of wealthy Romans were separated into starters, entrees and desserts, a style of dining still practiced today. This early Roman chef recounts how the early Romans used a good variety of spices and herbs, including many that are still in use today for example bay, fennel and dill. During the succeeding few centuries, the families of Europe competed with each other to offer the best banquets, and as a result chefs and their collection of recipes could command a high salary. Even so, it was during the 1800s that fine cooking and recipe collections really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated their lives to collecting, testing, and recording recipes of the day. By the time we get to the twentieth century, cookbooks were in great demand, due to increased literacy, leisure time and having more money to spend. |
