The History of Recipes
Recipes as an idea can be tracked way back into the far past, in truth as far back into history as ancient Egypt, and maybe further still. Interesting though that maybe, generally, these old cook books were just very simple hieroglyphic or cunieform instructions for meal preparation.
In an interesting twist, the most ancient recipe found, according to historians is a series of ancient tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful and blissful. Progressing into Roman times 25BC a roman called Apicius assembled a collection of scripts which described recipes enjoyed by the Romans. In his scrolls, he describes how the roman meals were split into hors d`oeuvre, entrees and desserts, something we still use today. Aspicius tells us how the cooks of Roman times made use of a wide range of herbs, including some familiar names such as basil, mint and dill. Later on, in the 15th century, knights returning from the crusades brought back many new spices and herbs from the East, including parsley, basil and rosemary. These new spices and herbs prompted a surge in books on cookery, most of which are now in private collections. Over the succeeding few centuries, the upper-class families of Wesstern Europe tried to serve up the most exotic meals, and as a result the best cooks and their collection of recipes were greatly in demand. Even so, it wasn`t until the 1800s that fine cooking and recipe books rose to prominence. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated years of their lives to assembling, verifying, and writing down popular recipes of the day. When we get to the 20th century, cooking books are increasing in popularity mostly due to increased literacy, people having more leisure time and having more money. |
