Chorizo Noodle Casserole Recipe


Ingredients

12 oz rotini
1 boiling salted water
1 tbsp butter or margarine
4 medium-size chorizo sausages
1 small onion, coarsely chopped
4 oz can green chilies, chopped
1 cup milk
1/2 tsp salt
1 dash of pepper
2 cup shredded jack cheese
6 to 8 tomato slices


Directions

Servings: 6

Following package directions, cook rotini in a large kettle of boiling
salted water until al dente. Drain, rinse with cold water, and drain
again.

Meanwhile, melt butter in a wide frying pan over medium-high heat.
Remove sausage casings, crumble meat into pan, add onion, and cook
until sausage is browned and onion is limp (about 5 minutes). Pour
off drippings and add cooked pasta, chilies, milk, salt and pepper to
taste.

Pour half the mixture into a greased 2 1/2 quart casserole; sprinkle
with half the cheese. Add remaining mixture, arrange tomato slices
on top, and sprinkle with remaining cheese. If made ahead, cover and
refrigerate until next day.

Bake, uncovered, in a 350 deg F oven for 25 to 35 minutes or until
top is slightly browned. Makes 6 servings.

The History of Recipes

It is possible to follow the history of written recipes back into history, certainly as far back as ancient Egypt, and maybe even further. Interesting though that maybe, in the main part, these old cook books were just very basic pictorial, hieroglyphic or cunieform instructions for food preparation.

Later on, there are two interesting books which appeared in the 1300s - a cookery book published under the title `Forme of Cury`, and another named `Curye on Inglish`. Although the titles sound familiar, these books are nothing to do with the indian curry that is familiar to us all today, but instead accounts of the types of food prepared by the cooks of the rich people of that time.

For the centuries that followed, the wealthy families of Wesstern Europe competed with each other to serve the most exotic meals, and consequentially chefs and their recipes were at a premium. Even so, it wasn`t until the 1800s that fine cooking and recipe books reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to collating, verifying, and recording recipes for their fellow cooks to enjoy.

By the time we get to the 20th century, recipe publications are in high demand, mostly as a result of better eduction, leisure time and having more money to spend.

The introduction of the TV brought us cooking programs and the recipe books that accompanied them.

Which brings us neatly up to date and the invention of computers and the internet, permitting everybody to search through massive numbers of recipes like the ones you can find on our web site.
