Ingredients
2 1/2 lb chuck steak, 1 1/2 thick
1 olive oil
1/4 cup scallions, finely chopped
1/2 cup soy sauce
1/4 cup catsup
1 tbsp prepared mustard
1 tsp pepper, freshly ground
Directions
Place the steak in a dish and puncture with a fork in several places,
then drizzle with the olive oil. In a small saucepan, combine 2 tb
olive oil, the scallions, soy sauce, catsup, mustard, and pepper.
Heat until well blend and it is just starting to boil. Meanwhile,
grill the steak, 2 to 3 inches above hot coals, until browned on both
sides, About 30 minutes for Medium-rare. Place the steak on a
serving platter and carve across the grain in 1/4-inch slices. Serve
2 to 3 slices per person, with the sauce on the side.

However, it was during the 19th century that fine cookery and recipe collections rose to prominence. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to collecting, trying out, and writing down the recipes of their peers. The revolution that is television brings us cooking programs and the demand for the spin-off recipe books.
