The History of Recipes
It is possible to trace the history of written recipes far back into distant history, certainly as far as the Egypt of the Pharoahs, and maybe further still. Interesting though that maybe, sadly, these old recipes were just simple hieroglyphic instructions for food preparation.
The truth of the matter is, the oldest recipe in existence, according to historians is a collection of ancient tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated and blissful. Later on, in Roman times around 25BC a roman called Apicius created a few scripts which described recipes enjoyed by the Romans. In his scrolls, he describes how the meals of wealthy Romans were separated into starters, entrees and desserts, something we still use today. He also describes how the chefs of Roman times were skilled in the use of a good variety of aromatic flavors, including a few that will be familiar to modern cooks like thyme, mint and asafoetida. Later on in the 1400s, people returning from the crusades brought us many new foods and herbs from Arab cuisine, including spices like coriander, parsley, and rosemary. These new foods and tastes was responsible for an outbreak in books on cooking, most of which are kept safe in private collections. The introduction of the TV gave us celebrity chefs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the internet revolution, allowing everyone to access massive numbers of recipes such as those found on sites such as the one you are reading now. |
