The History of Recipes
We are able to read the history of meal recipes back into ancient history, in fact as far back as the Egypt of the Pharoahs, and potentially, even further back. Interesting though that maybe, in the main part, these ancient cookbooks were just very basic hieroglyphic or cunieform recipes for preparing food.
As we move into The time of the roman empire 25BC a man called Apicius compiled a few scripts showing how to cook the recipes prepared by wealthy roman citizens. He tells us how the meals of wealthy Romans were divided into starters, main course and afters, a very modern way of dining. This early Roman chef tells us how the chefs of Roman times made use of many different herbs and spices, including a few that will be familiar to modern cooks for example basil, fennel and asafoetida. In the 15th century, knights returning from the crusades brought us many new foods and spices from the holy land, such as coriander, parsley, and rosemary. These new culinary innovations led to an increase in manuscripts on cookery, most of which are kept safe in academic collections. By the arrival of the twentieth century, recipe publications are starting to become popular as a result of better eduction, more free time and a general increase in wealth. |
