The History of Recipes
We are able to read the history of meal recipes way back into the distant past, in truth as far back into recorded history as the Egyptians, and quite possibly further than that. Interesting though that maybe, these, early recipes were just very basic pictorial instructions for meal preparation.
In fact, the oldest recipe found, according to academics is a collection of stone tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `blissful`. Later on, in Roman times around 25BC a man called Apicius compiled a number of scripts detailing recipes prepared by the Romans. In his works, Apicius recounts how the meals were separated into hors d`oeuvres, main meal and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he describes how the Romans were skilled in the use of a good variety of aromatic flavours, including a few that will be familiar to modern cooks such as basil, fennel and parsley. Later on in the 1400s, knights returning from the crusades brought us a variety of foods and herbs from the East, including basil and coriander. These new spices and herbs caused an explosion in recipe books, the majority of which are kept safe in academic collections. For the next few years, the wealthy families of Wesstern Europe competed to lay on the most exotic meals, and as a result the best cooks and their recipe collections were much in demand. Even so, it wasn`t until the 19th century that cookery and cookery books became popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to collecting, trying out, and publishing recipes for their fellow cooks to enjoy. By the advent of the twentieth century, recipe publications are highly popular mostly as a result of increased literacy, more leisure time and having more disposable income. The introduction of the TV brought us TV cooks and the recipe books that accompanied them. Which brings us neatly to the present day and the internet revolution, permitting everybody to access thousands of recipes such as those found on our site. |
