Ingredients
6 large eggs plus 5 egg yolks
2 can (14-oz)sweetened condensed
1 milk
1 whole milk to fill 2
1 condensed milk cans
1/4 cup vanilla extract
10 oz cream cheese, cut into bits
2 cup sugar
1/4 cup water
Directions
In a mixer or blender, blend eggs, yolks, sweetened condensed milk,
whole milk, vanilla and cream cheese and beat 10 minutes. In a
heavy-bottomed saucepan, melt sugar over medium heat until
caramelized. When sugar is melted and golden brown, add water. Stir
to combine. Pour a little of the caramel into each of 12 individual,
ovenproof flan dishes. Divide milk mixture evenly among dishes. Set
dishes in a larger baking dish;fill baking dish with water to come up
halfway on flan dishes. Bake uncovered at 200 degrees one hour.

The History of Recipes
Academics have tracked the existence of recipes far back into the distant past, in fact as far back into recorded history as ancient Egypt, and maybe further still. In practice though, in the main part, these ancient cook books were just basic hieroglyphic or cunieform recipes for preparing food.
Fascinatingly, the most ancient recipe in existence, according to Professor Solomon Katz, are a few stone tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful. Progressing into The time of the romans 25BC a roman called Apicius created a few scripts showing how to cook the recipes prepared by the Romans. In his publication, Apicius tells us how the roman meals were separated into starters, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef tells us how the cooks of his times were skilled in the use of a wide range of aromatic flavors, including some that we all recognise like basil, mint and parsley. In the 15th century, people returning from the crusades brought us many new foods and herbs from Arab countries, including basil and coriander. The introduction of these new tastes was responsible for an increase in publications on food, the majority of which still exist in academic collections. Over the next few centuries, the families of Europe strove to lay on the most exotic meals, and as a consequence, the best cooks and their recipe collections were highly sought after. Notwithstanding that, it was during the nineteenth century that fine cookery and cookery books really came of age. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to assembling, trying out, and recording recipes to help cooks of their time. The introduction of television gave us celebrity TV chefs and the recipe books that accompanied them. Which brings us neatly up to date and the invention of computers and the internet, allowing everyone to access massive numbers of recipes just like those on sites such as this. |
