Ingredients
4 cl garlic, quartered
1/2 cup chopped cilantro
1 each juice of lime
1 tsp powered ginger
1 tsp honey
1/4 tsp black pepper
1/4 tsp white pepper
1 each chile chipotle en adobo
1/2 tsp adobo sauce (from the canned
1 (chiles)
1 cup mayonnaise
Directions
Add all ingredients, except the mayonnaise, to the container of a
blender. Blend on low speed, stirring occasionally with a wooden
spoon until blended. Add mayonnaise. Blend on low speed stirring
occasionally until mixture is smoth and creamy, about 3 minutes.
Serve immediately or refrigerate until served.

The History of Recipes
Recipes as an idea can be tracked far back into antiquity, in truth as far into history as the Egypt of the Pharoahs, and possibly even further than that. Interesting though that maybe, generally, these old cookbooks were just simple pictorial, hieroglyphic or cunieform recipes for food preparation.
In an interesting twist, the most ancient recipe in existence, according to historians are some clay tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful. Continuing our culinary historical journey, we find two interesting recipe books published in the 14th Century ; one book titled `Forme of Cury`, and another, similary called `Curye on Inglish`. Amusingly, these are nothing to do with the curry that is served today, but rather descriptions of the types of meals prepared by the chefs of the upper classes of the period. Later on, in the 15th century, people returning from the crusades brought back many new foods and spices from Arab countries, such as rosemary and coriander. These new spices and herbs prompted a surge in manuscripts on food, the majority of which still exist in academic collections. Over the succeeding few centuries, the powerful and wealthy houses tried to serve up the most extravagent banquests, and as a consequence, cooks and their recipe collections were greatly in demand. Even so, it wasn`t until the 1800s that formal cookery and cookery books really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to assembling, trying out, and writing down recipes to help cooks of their time. The TV revolution gave us celebrity TV chefs and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the invention of the internet, permitting everybody to access thousands of recipes just like those on sites such as the one you are reading now. |
