The History of Recipes
We are able to trace the history of `recipes` back into distant history, in truth as far back into history as the ancient Egyptians, and possibly even further. Interesting though that is, in the main part, these old cookbooks were just simple pictorial recipes for food preparation.
The truth of the matter is, the most ancient recipe discovered, according to Professor Solomon Katz, is a collection of stone tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel blissful and exhilarated. As we move into Roman times 25BC a man called Apicius compiled some documents which described recipes enjoyed by wealthy roman citizens. In his works, he describes how the meals were separated into starters, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef recounts how the Roman cooks made use of a good variety of aromatic flavors, including a few you will know for example basil, mint and asafoetida. Later, in the fifteenth century, knights returning from the crusades brought us many new spices and herbs from the holy lands, including spices such as basil and rosemary. These new foods and tastes was responsible for an outbreak in manuscripts on cooking, the majority of which still exist in academic collections. By the advent of the 20th century, recipe books were increasing in popularity mostly due to better eduction, more spare time and being a little richer. The revolution that is television brought us celebrity chefs and the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, permitting us all to search through thousands of recipes such as those found on sites such as this. |
