The History of Recipes
It is possible to track the history of meal recipes far back into the distant past, at least as far back into history as pharonic Egypt, and quite possibly further than that. Interesting though that maybe, mostly, these early cook books were just very simple hieroglyphic instructions for preparing food.
Fascinatingly, the most ancient recipe discovered so far, according to historians are a few tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful and blissful. Progressing into The time of the roman empire around 25BC a roman called Apicius compiled a few documents which described recipes cooked by wealthy roman citizens. In his publication, he describes how the meals were separated into hors d`oeuvre, main meal and afters, something that is very familiar to us today. He also describes how the Roman cooks made use of a good variety of herbs, including a few that will be familiar to modern chefs like bay, mint and dill. Moving our culinary historical trip onwards, there were two interesting recipe books which date from the fourteenth century - one book published under the title `Forme of Cury`, and another entitled `Curye on Inglish`. Amusingly, these are unconnected to the curry that appears on menues today, but rather recipes for the types of meals eaten by the rich and powerful of those days. In the 15th century, people returning from the crusades brought us many new spices and herbs from Arab cuisine, including spices like coriander, parsley, and basil. These new spices and herbs prompted an eruption in manuscripts on food, some of which still exist in private libraries. The arrival of TV brings us celebrity TV chefs and the recipe books that accompanied them. And that neatly brings us to the present day and the invention of computers and the internet, permitting everyone to search through massive numbers of recipes such as those found on this web site. |
