The History of Recipes
It is quite feasible to prove the history of written cooking instructions back into antiquity, certainly as far into history as the Egypt of the Pharoahs, and maybe even further. Interesting though that is, sadly, these ancient cookbooks were just simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
As we move into The time of the romans 25BC a roman called Apicius created some scripts describing recipes enjoyed by the Romans. In his scrolls, he describes how the meals were separated into hors d`oeuvres, entrees and dessert, something we still use today. He also recounts how the Roman chefs used a good variety of spices and herbs, including a few you will know for example thyme, rue and asafoetida. Later, in the 15th century, people returning from the crusades brought back many foods, spices and herbs from middle-east cuisine, such as basil and coriander. These new foods and tastes caused a surge in recipe publications, most of which still exist in private collections. By the time we get to the twentieth century, cookbooks are in high demand, due to higher levels of literacy, more free time and having more money. |
