The History of Recipes
Transcribed cooking instructions as an idea can be tracked far back into distant history, in truth as far back as the early Egyptians, and quite possibly further than that. Interesting though that maybe, in the main part, these old cookbooks were just basic hieroglyphic instructions for food preparation.
Fascinatingly, the most ancient recipe discovered so far, according to academics are a few clay tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated and blissful. As we move into The time of the roman empire around 25BC a roman called Apicius wrote a collection of documents which described recipes cooked by wealthy roman citizens. In his scrolls, he recounts how the meals of wealthy Romans were separated into starters, main course and desserts, a very modern way of dining. Aspicius describes how the cooks of his times were skilled in the use of a good variety of spices, including some familiar names for example bay, fennel and dill. In the 15th century, people returning from the crusades brought back many new foods, spices and herbs from Arab cuisine, including coriander, parsley, and rosemary. The introduction of these new herbs and spices was responsible for an increase in books on cooking, the majority of which are now in private collections. When we get to the 1900s, cookbooks are starting to become popular due to higher levels of literacy, more leisure time and having more disposable income. The arrival of TV gave us celebrity TV chefs and the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everyone to access massive numbers of recipes such as those found on this recipe site. |
