The History of Recipes
It is quite feasible to track the history of transcribed cooking instructions back into distant history, certainly as far back into recorded history as the Egyptians, and possibly even further. However, these, ancient cook books were just very simple hieroglyphic or cunieform instructions for preparing food.
Interestingly, the oldest recipe discovered, according to experts in ancient history is a series of clay tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `exhilarated, wonderful and blissful`. Moving on, there are a couple of recipe books from the 1300s ; a book called `Forme of Cury`, and another entitled `Curye on Inglish`. Perhaps surprisingly, they are unconnected to the curry that is served today, but rather recipes for the types of food prepared for the nobility of the time. Later, in the 15th century, knights returning from the crusades brought us a variety of foods, spices and herbs from the holy lands, including spices such as rosemary and coriander. The introduction of these new foods and spices was responsible for a torrent in publications on food, some of which are now in private libraries. During the next few hundred years, the wealthy families of Europe competed to serve the best banquets, and consequentially chefs and their recipe collections increased in prestige. Nevertheless, it was during the nineteenth century that fine cookery and recipe publications became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated their lives to collating, verifying, and recording the recipes of their peers. By the advent of the 1900s, recipe publications are highly popular due to better eduction, increased leisure time and a general increase in wealth. Like it or not, the introduction of TV brought us TV cooks and the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting everybody to search through thousands of recipes like the ones you can find on our site. |
