The History of Recipes
Food historians have proved the existance of recipes far back into the distant past, at least as far back into recorded history as early Egypt, and possibly even further. Interesting though that maybe, generally, these old records were just basic pictorial instructions for meal preparation.
During the time of the Roman Empire a roman called Apicius created a collection of scripts describing recipes enjoyed by wealthy Romans. In his publication, he describes how the meals were separated into hors d`oeuvre, main course and afters, a very modern way of dining. Additionally, he informs us how the chefs of Roman times used many different herbs and spices, including some familiar names such as thyme, rue and asafoetida. In the fifteenth century, people returning from the crusades brought us many foods and herbs from middle-east cuisine, such as coriander, parsley, and rosemary. These new spices and herbs prompted a torrent in manuscripts on cooking, the majority of which still exist in academic collections. By the arrival of the 20th century, cookery books are in high demand, mostly as a result of higher levels of literacy, more free time and having more disposable income. |
