The History of Recipes
Historians have tracked the existence of recipes way back into the far past, in truth as far back into history as the ancient Egyptians, and possibly even further. Having said that, generally, these ancient recipes were just primitive hieroglyphic instructions for food preparation.
Fascinatingly, the most ancient recipe found, according to food historians is a collection of tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful. Progressing into The time of the roman empire around 25BC a man called Apicius created some scripts showing how to cook the recipes cooked by his fellow Romans. In his publication, Apicius recounts how the meals of wealthy Romans were divided into hors d`oeuvres, main course and desserts, a style of dining still practiced today. This early Roman chef recounts how the ancient chefs made use of a good variety of herbs and spices, including some that we all recognise for example bay, mint and parsley. As our culinary historical trip moves to more modern times we have some interesting books from the 1300s : a cookery book entitled `Forme of Cury`, and another entitled `Curye on Inglish`. Perhaps surprisingly, these books are not about the indian curry that is popular today, but rather recipes for the types of food prepared by the cooks of the wealthy. In the 15th century, knights returning from the crusades brought back a variety of foods, spices and herbs from the East, including spices such as coriander, parsley, basil and rosemary. These new foods and spices caused a torrent in recipe books, many of which still exist in private libraries. When we get to the 1900s, cooking publications were greatly in demand due to increased literacy, leisure time and having more money to spend. The arrival of TV brings us TV chefs and the spin-off recipe books. Which brings us neatly up to date and the invention of the internet, permitting us all to search through massive numbers of recipes such as those found on our web site. |
