Ingredients
1 1/2 tsp active dry yeast
2 cup bread flour
1 tsp salt
1 tbsp dark brown sugar, packed
1 tbsp nonfat dry milk
1 1/2 tsp cinnamon
1 tbsp butter/margarine
3/4 cup plus 1t water
1/4 cup raisins
1/4 cup chopped walnuts
Directions
Automatic Bread Program:
Add ingredients in order except raisins and walnuts. Press SELECT for
Normal. Press START. When the machine BEEPS 10 times, 5 minutes
before the end of the second kneading, add 1/4 c of raisins and
chopped walnuts. Bread will be ready in 3 hours. After baking, press
STOP/RESET. Remove bread from machine. Cool.

The History of Recipes
Academics have proved the existance of recipes way back into the distant past, certainly as far back into recorded history as early Egypt, and potentially, even further back. Having said that, sadly, these ancient cook books were just very simple pictorial, hieroglyphic or cunieform recipes for meal preparation.
Fascinatingly, the most ancient recipe discovered so far, according to Professor Solomon Katz, are some stone tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. As our culinary historical trip moves to more modern times we have two books which appeared in the 1300s ; a recipe book titled `Forme of Cury`, and another named `Curye on Inglish`. Amusingly, these books are unconnected to the indian curry that is popular today, but instead descriptions of the types of meals on the tables of the rich and powerful of the time. In the 15th century, knights returning from the crusades brought us many new foods and herbs from Arab cuisine, such as parsley and basil. These new spices and herbs created an eruption in books on cookery, many of which are kept safe in academic collections. Over the next few centuries, the rich families of Wesstern Europe tried to offer the most exotic meals, and because of this cooks and their recipe collections were highly sought after. Even so, it wasn`t until the 19th century that cookery and recipe collections became popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to collecting, verifying, and publishing recipes to help cooks of their time. By the arrival of the twentieth century, cooking publications are starting to become popular mostly as a result of higher levels of literacy, more spare time and being a little richer. The introduction of television brings us celebrity TV chefs and the recipe books that accompanied them. Which pretty much brings us up to date and the invention of computers and the internet, permitting us all to access massive numbers of recipes like the ones you can find on our site. |
