The History of Recipes
Written recipes as an idea can be found way back into antiquity, in fact as far into history as pharonic Egypt, and possibly even further. Interesting though that is, mostly, these ancient cook books were just basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
In an interesting twist, the most ancient recipe discovered, according to academics are a few ancient tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. During the time of the Romans a roman called Apicius compiled a number of documents showing how to cook the recipes enjoyed by his fellow Romans. In his works, he recounts how the meals were separated into hors d`oeuvre, entrees and dessert, something we still use today. Aspicius informs us how the ancient chefs made use of many different spices, including many that are still in use today such as bay, mint and parsley. Later on, in the 15th century, people returning from the crusades brought us a variety of foods and spices from the holy land, including spices such as basil and coriander. These new foods and tastes prompted a surge in recipe publications, most of which still exist in private cookery archives. Over the next few hundred years, the rich and powerful families of Wesstern Europe strove to serve up the most extravagent banquests, and consequentially chefs and their recipe collections were at a premium. However, it wasn`t until the 1800s that haute cuisine and recipe books really came of age. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collating, testing, and recording popular recipes of the day. The arrival of TV brings us TV chefs and the demand for the spin-off recipe books. And that brings us to the present day and the invention of the internet, permitting us all to search through massive numbers of recipes like those on this web site. |
