The History of Recipes
It is quite possible to prove the history of written cooking instructions back into ancient history, in truth as far as the early Egyptians, and possibly even further than that. Having said that, generally, these early cook books were just simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
Progressing into Roman times around 25BC a man called Apicius created some documents which described recipes prepared by wealthy roman citizens. In his works, he recounts how the meals of wealthy Romans were split into hors d`oeuvre, entrees and afters, a very modern way of dining. Aspicius also tells us how the chefs of Roman times used many different spices, including some familiar names for example thyme, fennel and dill. Later on in the 1400s, knights returning from the crusades brought back many new foods, spices and herbs from the holy land, such as coriander, basil and rosemary. The introduction of these new foods and spices prompted a surge in manuscripts on food, most of which are now in academic collections. By the advent of the twentieth century, cooking publications were increasing in popularity due to better eduction, people having more spare time and having more disposable income. |
