The History of Recipes
It is quite feasible to prove the history of transcribed cooking instructions back into ancient history, certainly as far back into history as ancient Egypt, and maybe even further. Interesting though that is, sadly, these old records were just basic pictorial, hieroglyphic or cunieform instructions for food preparation.
In fact, the oldest recipe in existence, according to food historians is a series of stone tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `wonderful`. Progressing into The time of the roman empire 25BC a man called Apicius created some documents detailing recipes enjoyed by his fellow Romans. He recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he tells us how the cooks of his times were skilled in the use of a wide range of aromatic flavors, including some familiar names like bay, rue and asafoetida. Later on in the 1400s, knights returning from the crusades brought back a variety of foods and herbs from Arab cooking, including spices such as rosemary and coriander. These new foods and tastes caused an eruption in books on cooking, the majority of which are now in private libraries. The introduction of the TV brings us TV cooks and the recipe books that accompanied them. Which pretty much brings us up to date and the invention of computers and the internet, allowing everyone to access massive numbers of recipes just like those on sites such as this. |
