Ingredients
MUFFINS
1 3/4 cup flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
1/2 tsp cinnamon
3/4 cup milk
1 egg
1/3 cup oil
3/4 cup sugar
TOPPING
1/2 cup butter, melted
3/4 cup sugar
3 tsp cinnamon
Directions
Heat oven to 350 degrees. Grease muffin pan or line with paper
liners.
Combine cinnamon and sugar for topping; set aside.
In a medium bowl, combine flour, baking powder, salt, nutmeg, and
cinnamon. In another bowl, combine thoroughly milk, egg, oil, and
sugar.
Add dry mixture to wet mixture and stir to just combine. DO NOT
OVERMIX.
Fill muffin pan 2/3 full and bake for 20-25 minutes. Remove from oven
and immediately dip tops in melted butter; then in cinnamon- sugar
mixture previously combined.
Makes 9-11 muffins.

The History of Recipes
We are able to follow the history of `recipes` back into antiquity, in truth as far into history as the Egyptians, and possibly even further. Having said that, generally, these early cookbooks were just simple hieroglyphic or cunieform instructions for meal preparation.
The truth of the matter is, the most ancient recipe found, according to experts in ancient history is a series of tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful and blissful. Later on, in The time of the roman empire 25BC a roman called Apicius assembled a collection of documents which described recipes cooked by the Romans. In his works, he describes how the meals were separated into starters, main meal and desserts, something we still use today. This early Roman chef recounts how the chefs of Roman times used a good variety of aromatic flavors, including a few that will be familiar to modern cooks like basil, mint and parsley. Later, in the fifteenth century, knights returning from the crusades brought back many new foods and spices from the Middle-East, such as basil and rosemary. These new foods and tastes was responsible for an explosion in recipe books, most of which are now in private collections. During the following few hundred years, the upper-class families of Europe tried to offer the most extravagent banquests, and as a result cooks and their collection of recipes increased in prestige. However, it was during the 19th century that cookery and recipe books rose to prominence. Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated their lives to collecting, trying out, and publishing recipes to help cooks of their time. The arrival of television brings us celebrity TV chefs and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of the internet, allowing everybody to search through thousands of recipes such as those found on sites such as this. |
