Ingredients
1 cup zucchini, grated & peeled
1 cup sugar
1/2 orange, grated. use fruit, juice
2 eggs
1/2 cup butter, softened
1 tsp vanilla
1 1/2 cup flour
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 cup yellow raisins
HONEY ORANGE CREAM CHEESE
1 package cream cheese (8 oz)
1/3 cup orange honey
1 tbsp orange peel, grated
1 tbsp frozen orange juice concent.
Directions
Beat together first 6 ingredients until blended. Combine and add the
remaining ingredients and stir until dry ingredients are just
moistened. Do not overmix.
Place batter into a 9x5-inch greased loaf pan and bake in a 350
oven for 50-55 minutes or until a cake tester, inserted in center,
comes out clean.
Allow to cool for 15 minutes, and then remove from pan and continue
cooling on a rack. Serve with Honey Orange Cream Cheese for a special
occasion. Yields: 1 large loaf.
For Honey Orange Cream Cheese: Beat cream cheese until light and
fluffy. Beat in the remaining ingredients until blended. Place
mixture into a pretty bowl or crock and refrigerate until serving

The History of Recipes
It is quite possible to track the history of written cooking instructions way back into distant history, in fact as far into history as the Egypt of the Pharoahs, and possibly even further than that. Interesting though that is, these, ancient cook books were just very simple pictorial instructions for preparing meals.
Interestingly, the most ancient recipe in existence, according to food historians is a collection of tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful. Moving on, there were some interesting books published in the 14th Century - a book entitled `Forme of Cury`, and another named `Curye on Inglish`. Despite their titles, these are unconnected to the indian curry that is popular today, but instead accounts of the types of meals served to the rich and powerful of the time. Later, in the 15th century, knights returning from the crusades brought back a variety of foods and spices from Arab cooking, such as coriander, parsley, and rosemary. The introduction of these new culinary ideas caused an eruption in books on cookery, many of which are kept safe in private libraries. During the next few hundred years, the upper-class families of the West strove to serve up the most extravagent banquests, and as a consequence, cooks and their recipes could command a high salary. However, it wasn`t until the 19th century that cookery and recipe collections became popular. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated years of their lives to collating, verifying, and recording popular recipes of the day. By the time we get to the twentieth century, cookery publications were greatly in demand as a result of more people being able to read, more free time and having more money to spend. Like it or not, the introduction of TV brings us TV chefs and the demand for the spin-off recipe books. Which brings us neatly up to date and the internet revolution, allowing everybody to search through thousands of recipes like those on the site you are now reading. |
