The History of Recipes
Historians have traced the existance of recipes back into the distant past, in fact as far back into history as pharonic Egypt, and possibly even further than that. Interesting though that maybe, mostly, these early recipes were just very simple pictorial instructions for meal preparation.
Fascinatingly, the most ancient recipe discovered so far, according to experts are some stone tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `wonderful`. During the time of the Roman Empire a roman called Apicius created some scripts detailing recipes enjoyed by wealthy roman citizens. In his works, he recounts how the meals were separated into hors d`oeuvre, entrees and dessert, a very modern way of dining. Additionally, he informs us how the Roman cooks used a good variety of herbs and spices, including a few that are still present in modern kitchens for example thyme, mint and asafoetida. In the fifteenth century, people returning from the crusades brought back a variety of spices and herbs from Arab cuisine, such as coriander, parsley, and rosemary. These new foods and tastes prompted an outbreak in publications on food, most of which are kept safe in private cookery archives. Over the following few hundred years, the powerful and rich competed to serve the most exotic banquets, and because of this cooks and their recipes were highly sought after. However, it wasn`t until the 1800s that fine cookery and recipe books became popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to collecting, verifying, and recording recipes of the day. The introduction of television gave us TV cooks and the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, permitting everyone to access thousands of recipes such as those found on our web site. |
