The History of Recipes
Experts have proved the existence of recipes far back into ancient history, in fact as far back as the Egypt of the Pharoahs, and possibly even further than that. Interesting though that maybe, sadly, these ancient records were just very simple pictorial instructions for food preparation.
During Roman times 25BC a roman called Apicius assembled a collection of documents which described recipes prepared by wealthy Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main course and afters, something that is very familiar to us today. Additionally, he recounts how the chefs of Roman times were skilled in the use of a wide range of spices and herbs, including a few you will know such as bay, rue and parsley. During the succeeding few centuries, the upper-class families of Europe tried to lay on the most exotic meals, and as a consequence, the best cooks and their recipes were at a premium. However, it wasn`t until the nineteenth century that formal cookery and recipe publications became really popular. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, spent years to assembling, testing, and publishing popular recipes of the day. Like it or not, the introduction of television brings us celebrity chefs and the recipe books that accompanied them. Which pretty much brings us up to date and the invention of the internet, allowing everybody to access thousands of recipes just like those on this site. |
