The History of Recipes
It is quite possible to prove the history of written cooking instructions way back into distant history, in fact as far into history as early Egypt, and possibly even further than that. However, sadly, these early recipes were just very simple hieroglyphic or cunieform instructions for meal preparation.
Progressing into Roman times around 25BC a roman called Apicius compiled a collection of documents showing how to cook the recipes cooked by wealthy Romans. In his scrolls, he describes how the meals of wealthy Romans were split into hors d`oeuvre, main course and dessert, something that is very familiar to us today. He also informs us how the early Romans were skilled in the use of many herbs, including a few that will be familiar to modern cooks like thyme, mint and dill. Later on in the 1400s, knights returning from the crusades brought back a variety of foods and herbs from middle-east cuisine, such as basil and coriander. These new herbs and spices prompted an increase in recipe manuscripts, some of which still exist in private libraries. By the advent of the twentieth century, cookery publications were greatly in demand mostly as a result of higher levels of literacy, people having more free time and disposable income. |
