The History of Recipes
Academics have tracked the existence of recipes far back into the distant past, in fact as far back into history as ancient Egypt, and possibly even further. Having said that, in the main part, these early records were just simple pictorial, hieroglyphic or cunieform instructions for food preparation.
In fact, the oldest recipe found, according to historians are some ancient tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful and blissful. Later on, in Roman times around 25BC a roman called Apicius created a few documents describing recipes enjoyed by wealthy roman citizens. In his works, Apicius tells us how the roman meals were separated into appetizers, entrees and dessert, a style of dining still practiced today. This early Roman chef informs us how the early Romans used a good variety of herbs, including a few that will be familiar to modern cooks for example basil, mint and asafoetida. Later on, we find two interesting books which appeared in the fourteenth century : one book titled `Forme of Cury`, and another called `Curye on Inglish`. The titles are somewhat misleading tho`, these books are unconnected to the curry that is served today, but rather recipes for the types of food prepared for the rich and powerful of the time. Later, in the fifteenth century, knights returning from the crusades brought back many foods and herbs from Arab cooking, including coriander, basil and rosemary. These new foods and tastes caused a torrent in publications on food, the majority of which still exist in private collections. The arrival of television brings us cooking programs and the recipe books that accompanied them. Which brings us neatly up to date and the invention of the internet, allowing everybody to search through massive numbers of recipes like those on sites such as this. |
