Ingredients
10 oz can minced clams
1/4 cup butter
3/4 cup flour
2 eggs
1 tsp salt
1/8 tsp white pepper
1/4 tsp crushed dillseed
1/4 tsp thyme
1/4 tsp paprika
1/2 tsp chopped chives
Directions
Drain clams and set aside, reserving 1/2 cup clam juice. Heat butter
and reserved clam juice in saucepan until mixture boils; reduce heat.
Add flour, stirring constantly until mixture leaves sides of pan and
forms a ball. Beat in eggs 1 at a time. Stir in clams, salt, pepper,
dillseed, thyme, paprika and chives. Drop by 1/2 teaspoonfuls into
greased baking pan. Bake at 400 degrees for 20 minutes or until
golden brown.
May freeze and reheat at 350 degrees for 10 to 15 minutes.

The History of Recipes
Written recipes as an idea can be tracked back into the far past, certainly as far back into history as ancient Egypt, and quite possibly further than that. In practice though, sadly, these ancient records were just basic hieroglyphic instructions for preparing meals.
Progressing into Roman times 25BC a man called Apicius created a few documents detailing recipes enjoyed by wealthy Romans. He tells us how the meals of wealthy Romans were divided into hors d`oeuvres, entrees and dessert, a very modern way of dining. Additionally, he tells us how the ancient cooks used a wide range of herbs, including a few that are still present in modern kitchens such as thyme, fennel and dill. Over the succeeding few centuries, the rich families of Wesstern Europe competed to serve the most exotic meals, and because of this the best cooks and their recipe collections increased in prestige. Notwithstanding that, it wasn`t until the 1800s that fine cookery and cookery books became popular. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated their lives to assembling, verifying, and recording recipes for their fellow cooks to enjoy. The TV revolution brings us TV cooks and the recipe books that accompanied them. Which brings us neatly to the present day and the invention of computers and the internet, allowing us all to search through thousands of recipes just like those on the site you are now reading. |
