The History of Recipes
It is quite possible to follow the history of written cooking instructions far back into the far past, at least as far back into recorded history as ancient Egypt, and possibly even further than that. However, generally, these early recipes were just very basic hieroglyphic or cunieform instructions for preparing meals.
As we move into Roman times around 25BC a roman called Apicius created a few scripts describing recipes prepared by the Romans. In his publication, he recounts how the meals of wealthy Romans were split into hors d`oeuvres, entrees and afters, something that is very familiar to us today. Aspicius tells us how the cooks of his times made use of many spices and herbs, including some that we all recognise such as bay, mint and asafoetida. During the following few centuries, the families of Europe competed with each other to offer the most exotic meals, and as a result cooks and their recipe collections were at a premium. Nevertheless, it wasn`t until the 1800s that cooking and recipe publications reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated the best years of their lives to collating, testing, and writing down popular recipes of the day. By the advent of the 1900s, cookbooks were in great demand, mostly as a result of increased literacy, people having more free time and having more disposable income. |
