Ingredients
2 cup cups
8 green new mexican chiles, roasted,, peeled, stems and
1 seeds removed, chopped
1 medium onion, chopped
2 cloves garlic, chopped
2 tbsp vegetable oil
1 medium tomato, peeled and chopped (optiona, l)
1/2 tsp ground cumin (optional)
2 cup water
Directions
Saute the onion and garlic in the oil until softened. Add the
remaining ingredients, bring to a boil, reduce heat, and simmer for
30 minutes.
Puree in blender for a smoother sauce. Eliminate the tomato for a
"purist's" sauce.

The History of Recipes
Transcribed cooking instructions as an idea can be tracked far back into the distant past, in truth as far back into recorded history as the early Egyptians, and possibly even further. Having said that, these, old records were just simple pictorial, hieroglyphic or cunieform instructions for preparing food.
In fact, the oldest recipe discovered, according to academics is a collection of clay tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful. Later on, in Roman times around 25BC a roman called Apicius created a few scripts detailing recipes enjoyed by the Romans. In his scrolls, he recounts how the meals of wealthy Romans were divided into appetizers, main meal and afters, something that is very familiar to us today. Aspicius also describes how the ancient Romans made use of a good variety of herbs and spices, including a few that will be familiar to modern cooks for example thyme, fennel and parsley. Later on in the 1400s, people returning from the crusades brought us a variety of spices and herbs from the holy lands, including spices like parsley and basil. The introduction of these new culinary ideas created an eruption in manuscripts on cookery, some of which still exist in private collections. For the next few years, the families of Europe competed to serve up the most exotic meals, and consequentially the best chefs and their recipe collections were at a premium. However, it was during the 19th century that cooking and recipe publications became really popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated the best years of their lives to collecting, verifying, and publishing recipes of the day. The introduction of the TV gave us TV cooks and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of computers and the internet, permitting everyone to search through massive numbers of recipes such as those found on our site. |
