The History of Recipes
Historians have traced the existance of recipes back into ancient history, certainly as far back as early Egypt, and maybe even further. Interesting though that maybe, these, ancient records were just very basic pictorial recipes for preparing food.
Fascinatingly, the oldest recipe found, according to experts are some tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `blissful`. During Roman times around 25BC a man called Apicius created some documents describing recipes cooked by wealthy roman citizens. In his scrolls, Apicius tells us how the roman meals were split into starters, main meal and afters, something we still use today. Additionally, he informs us how the ancient cooks made use of many herbs and spices, including a few that will be familiar to modern cooks for example basil, mint and parsley. In the fifteenth century, knights returning from the crusades brought back many foods and herbs from the East, including spices such as coriander, parsley, and rosemary. The introduction of these new herbs and spices was responsible for an eruption in manuscripts on cookery, most of which are now in academic collections. By the arrival of the 20th century, cooking publications were in high demand, mostly as a result of increased literacy, leisure time and disposable income. Like it or not, the introduction of television brings us cooking programs and the recipe books that accompanied them. Which brings us neatly to the present day and the invention of the internet, allowing us all to search through thousands of recipes like the ones you can find on our web site. |
