The History of Recipes
It is quite possible to follow the history of transcribed cooking instructions way back into ancient history, certainly as far as the Egypt of the Pharoahs, and quite possibly further than that. Having said that, mostly, these early recipes were just very simple pictorial recipes for meal preparation.
Progressing into Roman times around 25BC a man called Apicius created a collection of scripts detailing recipes prepared by wealthy roman citizens. In his scrolls, he tells us how the roman meals were split into hors d`oeuvre, entrees and desserts, something that is very familiar to us today. This early Roman chef describes how the Roman cooks made use of a good variety of spices, including many that are still in use today like bay, fennel and parsley. For the centuries that followed, the rich families of Europe competed to lay on the most extravagent banquests, and as a consequence, the best cooks and their collection of recipes were at a premium. Notwithstanding that, it wasn`t until the 1800s that fine cooking and recipe publications really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated years of their lives to collecting, testing, and recording recipes to allow everyone to enjoy them. The introduction of the TV brought us TV cooks and the demand for the spin-off recipe books. Which brings us neatly up to date and the internet revolution, permitting us all to search through thousands of recipes such as those found on this web site. |
We hope you enjoy this Clem's Chicken Mozzarella recipe.
