The History of Recipes
It is quite feasible to trace the history of written cooking instructions far back into history, at least as far back into recorded history as the Egyptians, and maybe further still. Interesting though that is, in the main part, these early records were just primitive pictorial, hieroglyphic or cunieform recipes for food preparation.
As we move into The time of the romans 25BC a roman called Apicius wrote a few documents describing recipes prepared by the Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into starters, entrees and dessert, something that is very familiar to us today. Aspicius informs us how the early Romans used many herbs, including a few you will know for example thyme, fennel and dill. In the fifteenth century, people returning from the crusades brought us many new foods and spices from the holy land, such as basil and coriander. The introduction of these new herbs and spices was responsible for an eruption in manuscripts on cookery, some of which are kept safe in private cookery archives. By the arrival of the 1900s, cookery books were increasing in popularity as a result of better eduction, more spare time and having more money to spend. |
