The History of Recipes
Transcribed cooking instructions as an idea can be tracked far back into the distant past, certainly as far into history as pharonic Egypt, and possibly even further. Interesting though that maybe, these, ancient cookbooks were just simple pictorial recipes for preparing meals.
As we move into The time of the roman empire around 25BC a roman called Apicius created a collection of scripts describing recipes cooked by his fellow Romans. In his publication, Apicius recounts how the meals were divided into hors d`oeuvre, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also tells us how the cooks of Roman times used a wide range of herbs and spices, including a few that will be familiar to modern cooks for example bay, rue and asafoetida. In the 15th century, people returning from the crusades brought us many foods and herbs from middle-east cuisine, such as basil and coriander. The introduction of these new herbs and spices prompted an explosion in recipe publications, the majority of which still exist in private libraries. The arrival of TV gave us cooking programs and the demand for the accompanying recipe books. Which brings us neatly to the present day and the invention of computers and the internet, allowing everybody to search through thousands of recipes just like those on our web site. |
