The History of Recipes
Academics have proved the existence of recipes far back into distant history, in truth as far into history as the Egyptians, and potentially, even further back. Having said that, generally, these ancient records were just basic hieroglyphic or cunieform recipes for preparing meals.
Fascinatingly, the most ancient recipe in existence, according to experts in ancient history are some stone tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful. As we move into The time of the roman empire 25BC a roman called Apicius created some scripts which described recipes cooked by wealthy Romans. In his scrolls, he recounts how the meals were split into hors d`oeuvre, main meal and dessert, something we still use today. This early Roman chef tells us how the cooks of Roman times used many spices and herbs, including a few that will be familiar to modern cooks like thyme, mint and asafoetida. In the fifteenth century, people returning from the crusades brought back many new foods and herbs from the holy lands, such as coriander, parsley, basil and rosemary. The introduction of these new foods and spices caused an increase in recipe manuscripts, many of which are kept safe in private collections. During the succeeding few hundred years, the powerful and rich tried to lay on the most extravagent meals, and consequentially cooks and their collection of recipes increased in prestige. Nevertheless, it wasn`t until the nineteenth century that haute cuisine and recipe collections reached a high level of popularity. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, devoted much of their lives to collating, trying out, and publishing popular recipes of the day. By the arrival of the 1900s, cookbooks are increasing in popularity mostly as a result of better eduction, people having more free time and a general increase in wealth. Like it or not, the introduction of television gave us celebrity chefs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to access massive numbers of recipes like the ones you can find on our site. |
