The History of Recipes
Food historians have proved the existence of recipes far back into antiquity, in truth as far back as early Egypt, and quite possibly further than that. Having said that, these, early cookbooks were just simple hieroglyphic instructions for food preparation.
Fascinatingly, the most ancient recipe discovered, according to academics are some stone tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated and blissful. Progressing into The time of the romans 25BC a roman called Apicius wrote some scripts which described recipes cooked by his fellow Romans. In his scrolls, he tells us how the roman meals were divided into hors d`oeuvre, main meal and desserts, a very modern way of dining. He also tells us how the ancient cooks used a wide range of aromatic flavours, including some familiar names like thyme, mint and asafoetida. As our culinary historical trip moves to more modern times we find two books which appeared in the fourteenth century - a cookery book titled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Don`t be fooled by the titles though, these are unconnected to the spicy food that we all know today, but rather descriptions of the types of meals enjoyed by the rich and powerful of the period. In the 15th century, people returning from the crusades brought back many new foods and herbs from the holy land, including coriander, parsley, and rosemary. These new culinary innovations prompted an eruption in books on cooking, the majority of which are now in academic collections. Over the next few centuries, the powerful and wealthy houses tried to offer the most extravagent meals, and consequentially the best cooks and their recipes were at a premium. Notwithstanding that, it wasn`t until the 19th century that fine cooking and cookery books rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to assembling, trying out, and writing down recipes to allow everyone to enjoy them. By the arrival of the twentieth century, cook books are starting to become popular mostly as a result of better eduction, more leisure time and having more disposable income. The introduction of television gave us celebrity TV chefs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing us all to access thousands of recipes just like those on our site. |
